INGREDIENTS 8 oz uncooked wheat or rice noodles (or soba) 4 Tablespoons Youjia Pickled Mustard Green 2 tablespoons Chinese black vinegar 3 tablespoons Youjia Ground Chili in Oil 1 teaspoon Youjia Sichuan Pepper Powder 4 cloves garlic, minced 1 small piece ginger, grated 2 tablespoons sesame seeds 4 tablespoons green onion, minced Youjia green onion oil, to taste 3 Persian cucumbers, fine julienned Toasted, shelled peanuts, optional
PREPARATION
1.Cook noodles according to package directions, and drain, reserving ¼ cup of cooking water. Place in a large bowl and refrigerate with ¼ cup cooking water (to prevent clumping).
2.In a large bowl, combine vinegar, chili sauce, Sichuan pepper powder, garlic, ginger, and sesame seeds, whisking to combine. Place ¼ of noodles in each individual bowl, and pour over ¼ of the sauce mixture.
3.Garnish each bowl with green onion,cucumbers and peanuts, finishing each bowl a generous spoonful of Youjia Hot and Spicy Vegetable Sauce and a drizzle of Youjia green onion oil. Enjoy!
