INGREDIENTS 4-5 Persian cucumbers cut into 1-inch long quarters 4 cloves garlic, minced 2 tablespoons rice vinegar Youjia garlic oil, to taste ½ teaspoon white sugar
PREPARATION
1. In a large zip top baggie, combine cucumber quarters and minced garlic.
2.Using a rolling pin or bottle, bruise cucumbers lightly, to allow them to absorb the marinade.
3. Open bag, and add remaining ingredients. Seal the bag and toss gently.
4. Refrigerate for minimum 15 minutes, to allow flavors to combine before serving.
